Rhubarb is high in fiber and antioxidants but low in calories, so it won’t spike your blood sugar. It is also a good source of many vitamins and minerals including Calcium, Potassium, Vitamins A, C & K. One of my favourite desserts to make with rhubarb is this Rhubarb Square. It is gluten-free, dairy-free, and sugar-free, so it won’t counteract the health benefits of the rhubarb.
